Pumpkin Pie Bites
1 Muffin for snack serve 1 ½ Cups Cooked Pumpkin- pureed 2 Ripe Bananas 1 Egg or Egg Replacement (Vegan Option) ¼ Cup Honey (optional) 1 tsp. Ground cinnamon ¼ tsp. Ground ginger ¼ Tsp. Ground nutmeg ¼ Tsp. Sea salt Whipped cream 1 Can Coconut milk 2 Egg Whites or Egg Replacement (Vegan Option) 1 Tsp Vanilla extract Directions - Preheat your oven to 180 C. In a bowl, combine all the ingredients for the pumpkin bites and blend until smooth using a mixer. Spoon the mixture into muffin cups. Bake in the preheated oven for 25 to 30 minutes. In a bowl, whip the two egg whites with a hand blender until they start to look like whipped cream; then slowly add the coconut milk while blending. Keep blending until you get a whipped cream texture, and add in the vanilla.Top each bite with whipped cream and serve. |
Roasted Chickpeas
1/2 Cup is 1 Serve
1 Can of Chickpeas Drained and Rinsed
2 Tbsp Olive Oil
1 Tsp Ground Cumin
1 Tsp Chilli Powder
1 Tsp Garlic Powder
1/2 Tsp Salt
1/2 Tsp Cayenne Pepper
Directions - Preheat oven to 200 degrees C. Spread into a single layer on a baking sheet. Grease or line a baking sheet. Bake until golden brown and slightly crispy, Whisk together olive oil, cumin, chili powder, garlic powder, cayenne pepper and salt. Add chickpeas and toss until thoroughly covered. Bake for about 45 minutes stirring halfway through.

No Bake Protein Balls
1 Ball is a Serve 1 Cup of Dates 3 Scoops of Protein Powder 1 Tsp Cinnamon 1/2 Cup Ground Dark Roast Coffee 3 Tbsp Raw Cacao or Cocoa 2 Cups of Almonds 1/4 Cup of Hemp seeds (Can replace with Chia seeds if you can't get the hemp seeds) 1 1/2 Tbsp Vanilla extract 1/2 Cup Water Directions - Place all ingredients except water in food processor. Blend until smooth. Slowly add water to mix- ture. The consistency should be thick and sticky like dough, but not wet. If too dry, add a little water to desired consistency. Transfer mixture to a bowl and place bowl in an airtight container in the refrigerator for a couple of hours to set. Once the consistency is thick and sticky, you’re ready to form into 1 inch balls. Store all prepared balls in the refrigerator. |
